WHere is an easy interpretation of a drink found on the seasonal drinks list. Designed as a batch premix which is bursting with the flavours of the Christmas time, which makes it perfect for hosting a celebration. Any leftover cordial to use in brunch beverages, sweets, or for more rounds of the drink.
The Bikini Cocktail
Serves 10 guests
Ingredients for the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Cocktail (makes 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Put every items in a saucepan, bring to a light boil, stirring until the sugar dissolves. Then, remove from the stove and leave to cool completely. Transfer to a clean bottle, seal and refrigerate it in the refrigerator, where it will keep for around one month.
For the Cocktail Base: Mix all the liquid ingredients into one large bottle, let it rest for 60 minutes, then filter it best through a fine cloth, so it's fully clarified.
When ready to serve: Pour 85ml of your premix into a mixing glass containing ice, and stir carefully for one minute until cold. Strain into an cold coupe glass or equivalent, top with a few cranberries adding the final touch by giving it a light spray of mandarin oil above the glass.
